Acacia honey is considered one of the most exquisite varieties of this natural delicacy and medicine, and it is impossible to confuse it with any other kind. The fragrant aroma is reminiscent of the smell of an acacia flower. The taste is very delicate. It is not characterized by the bitterness inherent, for example, in buckwheat or chestnut honey.

The color and condition are determined by the type of acacia it was harvested from. Thus, honey from white acacia in a liquid state is absolutely transparent and, when candied (crystallized), becomes white and of a fine-grained consistency. Honey from yellow acacia is very light, almost transparent, with a slight greenish tinge. Just pumped out, it splashes like water, and when candied it becomes like lard and also has a fine grain.

The peculiarity of acacia honey is that its crystallization is always very shallow and comes slowly. It retains its liquid state and fluidity for one to two years, which cannot be said about other varieties of bee nectar. This effect is achieved due to the low content of sucrose and a large amount of fructose, which in itself gives honey from acacia a special value. Even in crystallized form, it does not lose its tenderness and generally sufficient uniformity of consistency.
